Divine Smashed Acorn Squash

This is one of the simplest Fall squash recipes ever!

Acorn squash is vibrant in color and packed with nutrients. This is just one of the MANY plants Mother Nature has blessed us with that not only tastes divine, but is SO good for us! 

The bright orange flesh is full of vitamins C, A, and B... it has minerals like potassium, magnesium, iron, and manganese, which are ALL critical for health!

It's also ample with antioxidants that protect cellular health. 

Acorn squash is also a great source of fiber, which we all need more of in our diet!

Fiber feeds our good gut bugs, and if you are in my 14-Day Gut Reset Program, this recipe is for you (just skip the maple syrup!). 

This recipe is almost like dessert!

It's sweet, savory, and easy to pair with a clean meat!

I could eat it all day long. It's also a perfect and versatile carb that can take place of other starchy veggies, and is perfect in both sweet and savory recipes. 

Okay enough of it's magnificence, let's do this! 

Here's what you need... This recipe has about 2-3 servings. 

Ingredients: 

  • 1 Acorn Squash
  • 1 Tbsp. Coconut Oil
  • 2 Tbsp. Grass-Fed Butter
  • 2 Tbsp. Maple Syrup (optional!)
  • Salt & Pepper to taste
  • Pomegranate seeds (optional and if in season)

Directions: 

  1. Preheat oven to 400 degrees. 
  2. Cut acorn squash in half. 
  3. Scoop out seeds and discard, put in compost, or just place in your garden! 
  4. Slather the inside with coconut oil. Don't be shy
  5. Put in oven for 20-30 minutes. 
  6. It's done when it can be easily pierced all the way through with a fork. 
  7. Take out and allow to cool for a few minutes.
  8. Scoop out all the flesh and put into a mixing bowl. 
  9. Add butter, maple syrup (if using), and salt & pepper
  10. Mix well. 
  11. Serve. Top with pomegranate seeds if using. 
  12. Eat. 
  13. LOVE IT! 

Here is a dish I make often. Super simple! Local pasture-raised chicken breast, grilled to perfection, smashed acorn squash, and a side of broccoli sprouts. 

 

This is what I mean by making healthy eating simple. I'm a recovering perfectionist and complicated-ist. Eating nourishing food is simple... yet it's not always easy.
